Blood, viscera, fish: the glamorous world of salmon pickling: Jen Scott is a nurse by trade, but for 30 years she has been cleaning salmon for fishermen in Pulaski. Scott uses her vacation days – she calls it her “salmon sabbatical” – to stand all day in rubber boots, elbows buried in the guts of salmon, a fish she doesn’t particularly enjoy catching or eat. She doesn’t do it for the money, or to relax, or for the fame. So why then? “I like people,” Scott shrugged. “I love seeing everyone, that’s my favorite thing.
