A roast chicken lasagna recipe perfect for fall

A roast chicken can go a long way in the kitchen – and this recipe is proof

Lasagna, the ultimate comfort foodis a must on the menu like the chilly weather report takes hold. There’s nothing like a warm, comforting dish to warm you up from the inside out.

But if you’re looking to mix things up with the usual beef lasagna, a creative home chef has shared her take on the classic. Cookbook author Amy Sheppard took TikTok to reveal how you can make three delicious meals from just one roast chicken.


In his last recipeAmy puts a unique spin on traditional lasagna using delicious roast chicken. Her video, which she captioned: “This one is basically fall in a pan! Roasted chicken, cabbage and onion sautéed in a rich white mustard sauce… topped with lots of cheese!”, was a hit online, reports the daily report.

Amy explains in her TikTok: “This series has been all about how you can turn a roast chicken into twelve hearty dinners. No little dinners that you feel a little cheated about, these are real big, hearty dinners.”

The video went viral, racking up over 649,000 views, with over 20,700 likes and 163 comments. Fans of her food creations were quick to compliment her, with one user commenting: “Now THIS looks stunning.”

Skillet Chicken Lasagna

Ingredients (for four people)

  • Oil
  • One onion, thinly sliced
  • Five cavolo nero leaves (hard stem removed), thinly sliced
  • two cloves of garlic, finely chopped
  • 50g butter
  • 40g plain flour
  • 400 ml chicken broth
  • 500 ml of milk
  • A teaspoon of Dijon mustard
  • A teaspoon of dried oregano
  • 220 g minced roast chicken
  • Four sheets of fresh pasta
  • 200 g soft cheese with garlic and herbs
  • 40g of milk
  • 80 g grated cheddar

Method


Start by heating some oil in a large non-stick pan that is suitable for both the stovetop and grill. Add the onion and cabbage slices and let them sizzle for five minutes until they soften beautifully.

Add the garlic during the last minute of cooking before removing the vegetables from the pan and reserving them. Next, melt the butter in the same pan, then stir in the flour briskly over the heat for a few minutes.

Gradually pour in the broth, waiting for each addition to boil and stirring constantly. Once the broth is well incorporated, add the milk, mustard, oregano, minced chicken and reintroduce the cabbage and onion into the pan.


Mix everything well, season with a pinch of salt and pepper and gently bring everything to the boil. Cut the fresh pasta lengthwise into strips approximately 3 cm wide.

Stir the pasta strips into the sauce, turning over the heat until well coated. Simmer for about three minutes, until the pasta is softened and the chicken is heated through.

In another bowl, mix the soft cheese and milk, seasoning with a touch of salt and pepper. Remove the pasta and sauce from the heat.


Make sure any excess dough is squeezed out. Spread the soft cheese sauce evenly on top, followed by a layer of grated cheese. Grill over medium heat for five minutes or until cheese turns golden brown.

Serve immediately and savor every bite.
